My girls are loving this watermelon cucumber salad with honey lime dressing!
I’ve made it three times in the last two weeks and they STILL ask for it every day.

Ingredients for Easy Watermelon Cucumber Salad
Here’s what you’ll need to make this recipe:
For the honey lime dressing:
- Extra virgin olive oil
- Fresh lime zest
- Honey
- Lime juice (fresh squeezed is so much better than the bottle)
For the salad:
- Watermelon cut into cubes (or balls if you wanna get fancy)
- English cucumber sliced (the long skinny ones with less seeds)
- Fresh mint leaves thinly sliced
- Feta cheese cut into little cubes or crumbles
- Salt
Super simple ingredients that you probably already have most of!
I usually grab the watermelon and cucumber during my weekly grocery run and the mint plant on my windowsill has been going crazy lately so we always have that.
How to Make Your Watermelon Cucumber Salad with Honey Lime Dressing Recipe

First, lets make the dressing:
Grab a small bowl and add your olive oil, lime juice, lime zest and honey.
Give it a good whisk until everything is combined really well.
The dressing might look a little separated at first but keep whisking and it’ll come together!
Next, prep your salad:
Take your cubed watermelon, the sliced cucumber, and your fresh mint and toss them together in a big bowl.
I like to use my hands to gently mix everything.
Make sure you get the mint distributed really well so every bite has that fresh flavor.
Finally, bring it all together:
Drizzle that delicious dressing all over the salad.
Don’t dump it all at once or you’ll end up with some pieces super soaked and others dry.
Then sprinkle your feta cheese cubes on top.
Last step is adding sald which seriously makes all the difference!
Just a little sprinkle is all you need to make all the flavors pop.
If your serving this for guests put it in a pretty decorative bowl so everyone can admire all the pretty colors.
Make-Ahead & Storage Tips

- This salad is best eaten right away but will keep in the fridge for about a day if you have leftovers which honestly never happens in our house!
2. If you want to prep ahead for a busy night, you can definitely chop the watermelon and cucumber earlier in the day and store them separately in containers in the fridge.
3. The dressing can be made up to 3 days ahead and kept in a little jar in the fridge. It might solidify a bit because of the olive oil but just let it sit out for a few minutes and give it a good shake.
4. If your taking this to a potluck or team dinner, pack the components separately and assemble right before eating. Trust me on this one after my “watermelon soup” disaster when I tried to transport it already mixed.
5. If your storing leftover mint, wrap it in a slightly damp paper towel in the fridge.
Watermelon Cucumber Salad
This watermelon cucumber salad is seriously one of the easiest recipes in my summer rotation.
Takes like 10 minutes tops to throw together.
Its actually pretty healthy which makes me feel like super mom when the girls are devouring it instead of begging for popsicles.
Plus it uses up that giant watermelon that always seems too big when I buy it at Costco but somehow disappears in 2 days at our house.
And bonus its so pretty with all those colors that it looks like I put in way more effort than I actually did.
Salad Variations

There are so many ways to make this salad your own!
Sometimes I add thinly sliced red onion for an added flavor.
We’ve tried it with crumbled goat cheese instead of feta and that was amazing too.
You can also toss in some blueberries for a red white and blue version which I did for our 4th of July BBQ last year.
For a more filling version my oldest likes after soccer practice, I sometimes add some diced avocado and grilled chicken to make it more of a meal.
The lime in the dressing keeps the avocado from turning brown too fast which is a total win.
