Easy Crockpot Italian Chicken

My crockpot Italian chicken recipe has become such a staple in our house that the girls actually cheer when they smell it cooking. No joke!

The secret to this meal?

Tossing chicken breasts with Italian seasoning, a sprinkle of garlic powder, and a bit of salt, then drowning it all in Italian dressing before walking away and letting the crockpot work its magic.

What makes this recipe a permanent fixture in our meal rotation is how ridiculously easy it is to prep.

Five minutes tops!

We serve it over pasta and sometime some spinach for our veggie intake, or sometimes just with crusty bread for soaking up that amazing sauce.

The ingredient list of this recipe is so refreshingly simple that I don’t need to make a special trip to some fancy grocery store.

Everything is readily available at my regular supermarket, which is a huge win when I’m already juggling three different soccer schedules and a husband who’s often out of town on construction jobs.

The combination of Italian seasoning and garlic powder creates this perfect flavor base that even my pickiest eater (looking at you, middle child) doesn’t try to scrape off.

That blend of herbs and spices infuses into the chicken over those hours of cooking, creating this melt-in-your-mouth tenderness that’s impossible to achieve with quick cooking methods.

The dressing breaks down into this silky sauce that’s amazing drizzled over whatever side dish you’re serving.

  • Italian dressing – I prefer Newman’s Own Family Recipe Italian Dressing for this recipe, but use any Italian dressing you like.

How to Make Slow Cooker Italian Chicken

Step 1: Prep Your Crockpot

Give your crockpot a quick spray with nonstick cooking spray.

Trust me, the few seconds it takes to spray the pot saves so much cleanup time later!

Step 2: Create Your Seasoning Mix

Grab a small bowl and toss in your garlic powder, Italian seasoning, salt and pepper. Mix it all together until well combined.

Step 3: Prep That Chicken

Take a few minutes to trim any excess fat from your chicken breasts.

Then sprinkle your seasoning mixture all over both sides of each chicken breast, using your fingers to gently rub it in.

Step 4: Create Your Flavor Foundation

Pour just enough Italian dressing to cover the bottom of your crockpot.

This creates this amazing flavor base that keeps the chicken from sticking and starts the flavor infusion from the bottom up.

Step 5: Add Your Chicken

Place your seasoned chicken breasts into the crockpot, laying them in a single layer if possible.

If you need to overlap them a bit because you’re feeding a small army, that’s okay too.

The chicken will still cook perfectly, I promise!

Step 6: Dressing Shower Time

Now pour the remaining Italian dressing all over the chicken, making sure each piece gets thoroughly coated.

Sometimes I use a spoon to scoop some of the dressing from the bottom and pour it over any spots that look dry.

Step 7: Set It and Forget It

Put the lid on your crockpot and set it to low for 6-7 hours or high for 3-4 hours depending on your day’s schedule.

On soccer tournament days, I go with the low setting since we’re gone forever.

For regular practice days, the high setting works perfectly!

Either way, you’ll come home to the most amazing smell and chicken that’s so tender it falls apart when you just look at it.

By the time dinner rolls around, you’ll have the juiciest, most flavorful Italian chicken that pairs perfectly with pasta, rice, or even just a big salad.

Easy Crockpot Italian Chicken

Ingredients

  • 3-4 chicken breasts about 1-1½ pounds
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup Italian dressing I use Newman's Own Family Recipe Italian Dressing

Instructions

  • Spray your crockpot with non-stick cooking spray to save yourself scrubbing later!
  • Combine 1 teaspoon garlic powder, 1 tablespoon Italian seasoning, ½ teaspoon salt, and ½ teaspoon pepper in a small bowl. The youngest loves helping with this part!
  • Rub this seasoning mixture all over both sides of your chicken breasts, then place them in the crockpot.
  • Pour 1 cup of Italian dressing over the chicken, making sure each piece gets coated.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours. I usually do low when we have all-day soccer tournaments.
  • If you want shredded chicken (great for sandwiches!), pull it out and use two forks to shred it up.
