I’m so excited for 4th of July!
It’s not only my dad’s birthday, but it’s a fun family bbq day with appetizers, grilling and my famous no bake cheesecake.

You don’t need an oven, so this is my kind of summer dessert.
I made it last year for our little 4th of July BBQ and the kids went nuts.
All you need is some fridge space and like 20 quiet minutes in the kitchen!
The crust is just graham crackers, butter, and sugar.
I use pre-crushed crumbs instead of smashing crackers with a rolling pin.
The filling cream super simple too…no eggs, no baking, no fuss.
The fun part is making the flag with sliced strawberries for the stripes and blueberries in the corner for the stars.
Honestly, I just eyeball it.

Ingredients for a 4th of July No Bake Cheesecake

This isn’t one of those desserts that needs twenty weird ingredients or a candy thermometer.
Most of this stuff you’ve probably got already, and the rest is easy to grab on your next grocery run (I forgot the cream cheese last time and had to drag all three kids into the store… would not recommend).
It’s the kind of recipe that feels impressive but secretly takes almost no effort!
What You’ll Need:
- Cream cheese, softened
- Sugar
- Vanilla extract
- Powdered sugar
- Cool Whip thawed out (take it out of freezer about an hour before)
- Pre-crushed Graham crackers
- Butter, melted (to hold those crumbs together)
- Fresh strawberries cut in half
- Blueberries
How to Make a 4th of July No Bake Cheesecake
No oven, no problem! Just layer, chill, and decorate (and hope nobody steals the strawberries before you’re done).
1. Make the Crust
I dump the graham crumbs, sugar, and melted butter into a big bowl and mix it with a spoon till it looks kinda like damp sand.
Then I press it into a 9×13 dish using the bottom of a measuring cup, but honestly I’ve used my hand before when everything else was dirty.
Pop it in the fridge while you do the next part.
2. Mix the Filling
Soft cream cheese is a must here. If it’s cold, you’ll be chasing lumps forever!
I beat the cream cheese first, then add powdered sugar and a splash of vanilla.
Once that’s smooth, I fold in the whipped topping nice and slow (don’t whip it like mashed potatoes or it’ll go flat).
3. Spread and Chill
Scoop that creamy goodness onto your crust and spread it all the way to the corners.
Use a spatula or whatever’s clean.
I’ve definitely used a butter knife when I was in a rush.
Cover and toss it in the fridge for at least an hour. Two is better.
I usually forget about it and that works too.
4. Make Your Flag
Slice your strawberries into halves and lay them out like stripes.
Put the blueberries in the top left corner like a little square.
Sometimes I try to make it look tidy, sometimes I just let the youngest go wild.
And sometimes she does a better job than me!

- 1/4 cup powdered sugar gives it that little extra sweetness
- 2 cups Cool Whip thawed out take it out of freezer about an hour before
- 1 sleeve of Graham crackers crushed into crumbs
- 4 tablespoons butter melted (to hold those crumbs together)
- 2 cups fresh strawberries cut in half
- 1/3 cup blueberries
Instructions
Make the Crust
- Mix graham crumbs, sugar and melted butter in bowl until like damp sand
- Press into 9×13 dish using measuring cup bottom
- Chill in fridge
Make the Filling
- Beat softened cream cheese until smooth
- Add powdered sugar and vanilla
- Gently fold in Cool Whip (don't overmix!)
- Scoop filling onto crust and spread to corners
Spread and Chill
- Cover and refrigerate at least 1 hour (2 is better)
Make Your Flag
- Arrange strawberry halves in rows for stripes
- Place blueberries in top left corner for stars
