4th of July No Bake Cheesecake

Ingredients

  • 2 packages 8 oz each of cream cheese, softened
  • 1/3 cup sugar
  • 2 teaspoons vanilla extract the real stuff makes such a difference!
  • 1/4 cup powdered sugar gives it that little extra sweetness
  • 2 cups Cool Whip thawed out take it out of freezer about an hour before
  • 1 sleeve of Graham crackers crushed into crumbs
  • 4 tablespoons butter melted (to hold those crumbs together)
  • 2 cups fresh strawberries cut in half
  • 1/3 cup blueberries

Instructions

Make the Crust

  • Mix graham crumbs, sugar and melted butter in bowl until like damp sand
  • Press into 9x13 dish using measuring cup bottom
  • Chill in fridge

Make the Filling

  • Beat softened cream cheese until smooth
  • Add powdered sugar and vanilla
  • Gently fold in Cool Whip (don't overmix!)
  • Scoop filling onto crust and spread to corners

Spread and Chill

  • Cover and refrigerate at least 1 hour (2 is better)

Make Your Flag

  • Arrange strawberry halves in rows for stripes
  • Place blueberries in top left corner for stars
