Tex-Mex Chopped Chicken Salad

Ingredients

  • 2 cups cooked chicken breast chopped
  • 1 cup cherry tomatoes halved
  • 1 cup canned black beans drained and rinsed
  • 1 cup canned corn drained
  • 1 red bell pepper diced
  • 1 avocado diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup shredded cheddar cheese
  • 6 cups chopped romaine lettuce
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup crushed tortilla chips

Dressing

  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together all dressing ingredients until smooth. Set aside.
  • In a large bowl, add chopped lettuce as the base.
  • Layer chicken, beans, corn, tomatoes, bell pepper, avocado, red onion, cheese, and cilantro on top.
  • Drizzle with dressing and toss everything to coat evenly.
  • Sprinkle crushed tortilla chips on top just before serving.
  • Serve immediately or chill for 15 minutes if you want it extra refreshing.
