Tasty Italian Pasta Salad

Ingredients

  • 3 cups cooked rotini tri-color or regular
  • 1 cup cherry tomatoes halved
  • 1 cup chopped cucumber
  • 1/2 cup sliced black olives
  • 1/2 cup cubed or shredded mozzarella cheese
  • 1/3 cup chopped pepperoni
  • 1/4 cup thinly sliced red onion optional
  • 1 cup Italian dressing
  • Salt and pepper to taste
  • Grated Parmesan cheese optional

Instructions

  • Cook the rotini according to package directions. Drain and rinse with cold water to cool.
  • In a large bowl, combine the pasta, cherry tomatoes, cucumber, olives, mozzarella, pepperoni, and red onion.
  • Pour the Italian dressing over the salad and toss to coat evenly.
  • Refrigerate for at least 30 minutes to allow flavors to develop.
  • Before serving, taste and adjust seasoning with salt, pepper, or more dressing if needed. Sprinkle with Parmesan if desired.
