Soft and Chewy Oatmeal Cookies

Ingredients

  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup chocolate chips or raisins

Instructions

  • Preheat oven to 350°F and line two baking sheets with parchment paper.
  • In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs and vanilla extract until combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Stir in the oats and chocolate chips until evenly distributed.
  • Scoop dough onto prepared baking sheets using a tablespoon or cookie scoop.
  • Bake for 10–12 minutes, until edges are lightly golden and centers are set.
  • Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
