Mini Funfetti Greek Yogurt Muffins

Ingredients

  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup plain Greek yogurt
  • ¼ cup milk
  • 1 egg

Instructions

  • preheating your oven to 375°F and lightly greasing a mini muffin pan or adding liners.
  • In a bowl, whisk together the Greek yogurt, milk, egg, melted butter, and vanilla until smooth
  • Add in the flour, sugar, baking powder, and salt.
  • Gently fold in the sprinkles so they don’t bleed too much color into the batter.
  • Scoop the batter into your mini muffin pan, filling each about ¾ full.
  • Bake for about 10–12 minutes, or until the tops are lightly golden and a toothpick comes out clean
  • Let them cool for a few minutes before taking them out
