Healthy Cabbage Salad for the New Year

Ingredients

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 large carrot grated
  • 1 bell pepper thinly sliced
  • 2 green onions sliced
  • 1/4 cup chopped fresh cilantro optional
  • 1/3 cup sliced almonds
  • 2 tablespoons sesame seeds
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Add green cabbage, red cabbage, carrot, bell pepper, green onions, and cilantro to a big bowl.
  • Toss in sliced almonds and sesame seeds.
  • Whisk olive oil, apple cider vinegar, honey, soy sauce, Dijon mustard, salt, and pepper together in a small bowl or jar.
  • Pour dressing over salad, then toss until everything’s coated.
  • Taste and add more salt or pepper if needed.
  • Let the salad sit 10–15 minutes before serving for extra flavor.
