Hawaiian Macaroni Salad (Mac Salad)

Ingredients

  • 8 ounces elbow macaroni noodles
  • 1 ¼ cup mayonnaise
  • ¼ cup milk
  • 1 Tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded carrots
  • 4 stalks chopped green onions

Instructions

  • Boil the macaroni noodles according to box directions until slightly soft. Drain but don’t rinse.
  • In a large bowl whisk together the mayonnaise, milk, apple cider vinegar, sugar, salt and pepper until smooth.
  • Add the warm pasta to the dressing mixture, then stir in the carrots and green onions until everything is coated.
  • Cover and refrigerate for at least 1 hour but overnight is best! The flavors get so much better with time.
  • Give it a good stir before serving and enjoy!
