Fun Chocolate-Covered Valentine’s Day Marshmallow Pops

Ingredients

  • 20 large marshmallows
  • 20 lollipop sticks or paper straws
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening
  • 1/3 cup Valentine’s Day sprinkles
  • 1/2 cup pink or red candy melts optional

Instructions

  • Insert one lollipop stick into the center of each marshmallow, pushing it about halfway through.
  • Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave in 30 second intervals, stirring each time, until smooth.
  • Dip each marshmallow into the melted chocolate, turning to coat completely and gently tapping off excess.
  • Sprinkle with Valentine’s Day sprinkles right away before the chocolate sets.
  • Place the pops upright in a foam block or lay them on parchment paper and let them set at room temperature or in the fridge.
