Add the sugar and mix until fully combined and fluffy.
Beat in the egg and vanilla extract until smooth.
Add the flour, baking powder, and salt and mix just until a soft dough forms.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them apart.
Press your thumb or the back of a spoon into the center of each dough ball to create an indent.
Spoon a small amount of strawberry jam into each indent.
Bake for 14 to 16 minutes, until the cookies are set and the bottoms are lightly golden.
Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
