Easy Strawberry Cheesecake Thumbprint Cookies

Ingredients

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups all purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ⅓ to ½ cup strawberry jam

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • In a large bowl, beat the cream cheese and butter together until smooth and creamy.
  • Add the sugar and mix until fully combined and fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Add the flour, baking powder, and salt and mix just until a soft dough forms.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them apart.
  • Press your thumb or the back of a spoon into the center of each dough ball to create an indent.
  • Spoon a small amount of strawberry jam into each indent.
  • Bake for 14 to 16 minutes, until the cookies are set and the bottoms are lightly golden.
  • Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
