Easy Quiche with Herby Crust

Ingredients

Herby Pie Crust

  • 1 ¼ cups all-purpose flour
  • ½ tsp salt
  • 1 tsp dried mixed herbs thyme, parsley, or basil
  • ½ cup cold unsalted butter cubed
  • 3 –4 tbsp ice water

Quiche Filling

  • 6 large eggs
  • 1 cup milk
  • ½ cup heavy cream
  • 1 cup shredded cheese cheddar, Swiss, or mozzarella
  • ½ cup cooked ham or bacon bits optional
  • ½ cup chopped vegetables spinach, onions, peppers, etc.
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine flour, salt, and dried herbs.
  • Cut in cold butter using a pastry cutter or fork until mixture looks crumbly.
  • Add ice water 1 tablespoon at a time until dough comes together.
  • Shape dough into a disk, wrap in plastic, and refrigerate for 20–30 minutes.
  • Roll out the dough on a floured surface and fit it into a 9-inch pie dish. Trim edges and set aside.
  • In another bowl, whisk together eggs, milk, and cream until smooth.
  • Stir in cheese, meat, and vegetables. Season with salt and pepper.
  • Pour filling into prepared crust.
  • Bake for 40–45 minutes, until center is set and top is golden.
  • Let cool for 10 minutes before slicing and serving.
