Classic Lemon Squares

Ingredients

For the Crust:

  • 1 cup shredded or flaked coconut
  • 1 cup flour
  • ½ cup butter
  • 2 tbsp sugar
  • ¼ tsp salt

For the Filling:

  • 2 tbsp flour
  • ¾ cup sugar
  • 2 eggs
  • ¼ cup lemon juice
  • Icing sugar for topping

Instructions

For the Crust:

  • Preheat oven 350
  • Combine coconut, flour, sugar and salt.
  • Cut in butter until mixture is crumbly.
  • In a 9x9 pan and with lightly floured fingers, press the mixture evenly and firmly over the bottom and 3/4 inches up the sides of the 9x9 pan.
  • Bake until golden, about 20 minutes.

For the Filling

  • In a small bowl beat together eggs, sugar, flour and lemon juice.
  • Pour over crust
  • Continue to bake until set, about 20 minutes.
  • Cool in the pan on a rack.
  • Sprinkle with icing sugar, cut into squares.
