Cheesy Potato Egg Scramble

Ingredients

  • 2 medium russet or Yukon Gold potatoes diced
  • 1 tbsp butter or olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped fresh parsley or green onions optional

Instructions

  • Toss those diced potatoes into a hot skillet with melted butter, salt, pepper, and garlic powder. Cook about 10-12 minutes until golden and crispy, stirring occasionally.
  • Whisk your eggs and milk together in a small bowl until frothy.
  • Push the crispy potatoes to one side of the pan, then pour your egg mixture into the empty space. Let them cook gently, stirring occasionally until just set.
  • Gently fold the eggs and potatoes together, then sprinkle cheese all over the top. Cover for 1-2 minutes until the cheese gets all melty and amazing.
  • Finish with a sprinkle of green onions or parsley and serve while hot!
