Thank goodness Italian sausage and peppers is just so easy!

I usually go with mild sausage but spicy works if that’s your thing.

Ready to throw it all together? Here’s how you make it:
1. Preheat The Oven
Set it to 400°F. If your oven takes forever like mine, do this before you even pull stuff out of the fridge.
2. Slice The Veggies
Cut the peppers into strips and the onion nice and thin. Doesn’t have to be perfect—just not giant chunks that’ll stay crunchy forever.
3. Toss Everything On A Sheet Pan
Grab a big one. Throw on the sausage, peppers, and onion, then drizzle with olive oil and all the seasonings. I just eyeball it.
4. Mix It All Together
Use your hands or tongs, whichever’s clean. Just get everything coated so it roasts up all golden and tasty.
5. Bake For 25–30 Minutes
Pop it in the oven and flip the sausages halfway through. Keep an eye on the veggies—edges should start to brown a bit.
6. Broil If You Want A Bit More Color
Totally optional, but if you like that roasted look, broil it for 2–3 minutes at the end. Just don’t walk away.
7. Serve However You Want
Over rice, with pasta, or stuffed in a bun. I’ve even just scooped it straight onto a plate when I couldn’t be bothered.

This is one of those meals that works in a bunch of different ways, even the leftovers!
If you’ve got extra (or just want to switch it up), here are some easy ideas that don’t need a full recipe:
